To cook palm oil rice, you will need the following:


INGREDIENTS


  1. Rice
  2. Chopped Onions
  3. Prawns
  4. Blended crayfish
  5. Blended fresh pepper
  6. Palm oil
  7. locust beans (optional)
  8. Any protein of your choice(Chicken, beef, fish etc)
  9. Seasoning cubes to taste
  10. Salt to taste
  11. Scent leaf(optional)



Here is how you can cook the palm oil rice:


PREPARATIONS


  • Parboil the rice and rinse the rice in cold water until the water runs clear. This will remove any excess starch from the rice and make it more fluffy when cooked.
  • In a saucepan, heat the palm oil over medium heat until it is melted and hot. Add the chopped onion and fry for 30 seconds, add the locust beans and fry for another 30 seconds, add the blended pepper and stir at intervals until it's almost dried.
  • Add the blended crayfish, prawns, salt, seasoning cubes and the stock from your meat or fish. Allow to come to a boil. Add water and the parboiled rice and stir to combine. Bring the water to a boil, then reduce the heat to low and cover the saucepan with a lid.
  • Let the rice simmer on low heat for about 20 minutes, or until the water has been absorbed and the rice is cooked through. Then add the scent leave.
  • Remove the saucepan from the heat and let the rice sit, covered, for an additional 10 minutes. This will allow the rice to steam and become even more fluffy.
  • Your rice is ready to be served. You can enjoy your palm oil rice as a side dish or as the base of a delicious meal.
